Angel Hair Pasta with Tomatoes,
Feta and Pine Nuts


8   oz dried angel hair pasta
1   tbsp olive oil plus
1/3   cup olive oil
1/2   cup thinly sliced fresh basil
3   tbsp chopped fresh Italian parsley
2   tbsp minced garlic
2   tbsp minced shallots
1 1/2   lbs plum tomatoes, diced
1   tsp salt
3/4   tsp black pepper
1   cup coarsely crumbled feta cheese
1/2   cup freshly shredded Parmesan cheese plus
1/4   cup shaved cheese
1/3   cup toasted pine nuts

1. Bring a large pot of salted water to a boil; stir in pasta and cook for 1 minute.
Drain, reserving 1/4 cup of the cooking liquid. Toss pasta in a large bowl with
1 tbsp of oil; set aside along with reserved liquid.
2. Place remaining oil in a large nonstick pan over high heat. Add basil, parsley,
garlic and shallots; stir until fragrant (20 seconds). Add tomatoes and sauté
until heated through
(45 seconds). Remove from heat; stir in salt and pepper, then feta and shredded Parmesan. Add pasta and toss gently, adding reserved liquid if needed to moisten.
3. Mound on platter or individual plates and sprinkle with pine nuts and
shaved Parmesan.

Serves 6. Analysis per serving: 434 calories, 17g protein, 30g fat (10g saturated),
<1g fiber, 31g carbohydrates
