Curried Chicken Kiwifruit Salad

1 1/2  cups cooked, shredded chicken breast (8 oz)
3  green kiwifruit, peeled, quartered and sliced
1  apple, cored and diced
1/2  cup sliced celery
1/3  cup golden raisins
1/2  cup plain nonfat yogurt
1 1/2  tsp curry powder
4  tsp brown sugar, packed
4  tsp lime juice
1/4  tsp salt
4  whole-wheat pita breads

1. Mix the chicken, kiwifruit, apple, celery and raisins in a large bowl, and set aside.
2. Blend the yogurt, curry powder, brown sugar, lime juice and salt in a small bowl.
Pour over the chicken mixture and toss lightly until blended.
3. Stuff chicken salad into the pita bread halves, and serve immediately.


Serves 4. Analysis per serving: 350 calories, 25g protein,
3.5g fat (1g saturated), 7g fiber,
56g carbohydrates
